I haven't commented in a while, but...Hi, Becca! I haven't commented in a while, but I'm still keeping up with your fun family. One of my favorite meals, especially after baking a whole chicken, is an easy fix. I'll boil some noodles (usually bow ties), then in a large skillet, I'll sauté some veggies (asparagus, broccoli, carrots, onions, whatever) with a little garlic. When the veggies start to just soften, I'll throw in the leftover chicken (diced) with some lemon pepper (or whatever spices sound good). I'll let all that heat a few minutes, then I add some white wine (or chicken broth would do). I add the cooked pasta, then cover the skillet with a cover and let it all heat and simmer for a few minutes. That's it! Always yummy, and I can always use up whatever veggies, etc., may be in the refrig.<br />Lee AnnAnonymousnoreply@blogger.com
