Our Meal Plan: 8/4-8/10

Sunday: Sean was thrilled when I found frozen White Castle Hamburgers at the grocery store for dinner! I ate a frozen hot pocket...
Monday: Beef Stroganoff, Mashed Potatoes, Green Beans
Tuesday: Artichoke-Red Pepper Chicken, Feta Salad
Wednesday: Chicken Salad Sandwiches, Chips
Thursday: Eggplant Parmesan, Salad
Friday: Sweet Pea and Parmesan Risotto, Salad
Saturday:  Leftovers

  1. I love your meal plan. Thank you! We NEVER know what to have. We were tired of the same old boring meals. Now I have a new variety.

    1. They are definitely a special burger! (but I think I'll just stick to my own hot pocket...:) )

  3. We're trying all new dinners this week to accommodate my husband's diet. (He says its a lifestyle, but its really just a diet.) Only three things I typically make fit the requirements, so I went out on the www and came up with this:
    Mediterranean Chicken, Thai Salmon Fishcakes & Salad, Braised Chicken Thighs w/ Spinach and White Beans, Pollo Rojo & Refriend Beans and Flank Steak with Chimichurri & Carrot-Mint Salad. (The Carrot-Mint Salad I've made before and it is delicious - I can't wait to eat it!)

    Your Artichoke-Red Pepper Chicken sounds delicious!
