Our Meal Plan: 4/21-4/27

Sunday: Banana Protein Pancakes; Fresh Strawberries; Bacon, Cheddar, Veggie Scramble
Monday: Bits & Pieces Soup, Biscuits and Honey
Tuesday: Spaghetti with Meat Sauce, Steamed Broccoli, Biscuits
Wednesday: Baked Potatoes, Corn on the Cob
Thursday: Moussaka, Salad
Friday: Lasagna, Salad, Italian Bread
Saturday: Leftovers

  1. I'm definitely going to check out your meal tips! :) My little guy is gluten free, but switching everything over GF is no problem! Thanks for the fantastic idea! (I love that Saturday is leftover day!)

    1. I try to put leftovers on Saturday on purpose so that I can spend more time with the family and less time in the kitchen. That, and so dinner prep doesn't interrupt my Saturday afternoon nap. ;)

  2. I have never heard of moussaka before, but I have seen it on your menu a few times. Would you mind sharing a link to your recipe? Voted again!

      Moussaka is the National Dish of Greece. It's so, so, so good...and so, so, so time consuming to make. I really only make it once a year, but when I do, I always double it. It takes the same amount of time to make one batch as it does to make two. This week we are eating the frozen second batch from a couple of weeks ago.

      I always use ground beef in place of the lamb and double the cinnamon and nutmeg. So good!

      Serve it with this Tzatziki Sauce and pita bread on the side!

    Tuesday: Clam Chowder
    Wednesday: Princess's B-Day Dinner - Daddy's Spaghetti by request
    Thursday: Breakfast Casserole
    Friday: Thai Curry Chicken Soup
    Saturday: Leftovers
    Sunday: Waffles, bacon and eggs.
