Effortless Meals for Busy School Nights

You'd think that I would suddenly have a huge surplus of time now that the kids are back in school, but honestly, I've never been more busy. I love my life and what I get to do with my time but....sheesh!...I'm starting to realize that my life will only continue to speed up instead of slow down.

As long as we are being honest, I'll admit that cooking dinner is not my favorite part of the day. I meal plan every week so that I'm forced to think about dinner instead of call of (very expensive) take out. I don't mind cooking, but I do mind the time it takes to prep, cook, and clean up everything. It seems that most of my evenings are spent doing that with very little time for just hanging out with my family. I'm suddenly less interested in gourmet meals, and much more interested in "how fast can I put this together?" If you check my search history, you'll see that I've been googling "30 Minute Meals" like crazy.

Earlier this summer, I discovered that Walmart actually has some pretty darn good pre-made salads in their deli/produce section. They have a Southwestern Salad that is really tasty (it has roasted red peppers on it. Amazing!)! However, I didn't pay much attention to the other ready-to-go meals until school was about to start back up.

But that all changed on "Meet the Teacher" night. We needed a fast meal to fit between naps and heading to the school, so the kids and I went to Walmart and picked out one of their Effortless Meals. We decided to go with sub sandwiches, a Southwestern salad, Kettle Chips (love those!), and a bottle of Coca-Cola. I wanted to pull dinner out of the refrigerator, throw it on the table, eat, and then leave.

We grabbed four different types of sandwiches to give them a try. All we added was mayo and mustard, but you could add some onion and tomato if you have them on hand. They were pretty tasty for a quick grab-and-go item, and the clean up was a breeze! We made it out the door with quadruplets and showed up with plenty of time to meet our four different teachers. Success all around!

I accidentally ended up buying a LOT more than we ate, so I happily had sub sandwiches to munch on for lunch throughout the week...and Sean may or may not have come home the next day to find all of the coke gone. It was nice to enjoy fuss-free meals throughout the week that didn't involve a granola bar and a glass of water while chasing kids.
Since I shop at Walmart, it's great to have an option for a quick dinner that I can be on the table without any prep. Sandwiches, pizza, rotisserie chicken, salads, plenty of sides, and a 2 liter of Coca-Cola. Dinner is easy peasy!
